Heat 1 tsp oil in skillet over med/high; pat both steaks dry, season with salt/pep + 2 tsp taco seasoning; sear undisturbed 2-3 min, flip + cook an additional 2-3 min for med-rare (for more well done add 1-2 min per side); rest steaks 5 min on cutting board; cut steaks against grain into ½-inch slices
Meanwhile, heat 1 tbsp oil in skillet over med-high; season veggies with salt/pep + 1 tsp taco seasoning; sauté 4-5 min or until soft + starting to brown; set aside
In batches, heat 2 tortillas in a skillet over med-high 30 sec or until warm
Add fillings to tortillas, top with extra goodies (our favs: sour cream + avocado crema) then fold + enjoy!
