Urepel Basque Sheep's Milk Cheese : $10.29

Urepel is a seasonal, limited production sheep’s milk cheese made in France’s Basque country and aged in Spain’s Basque Country. No borders with this cheese – it is a complete Basque production!

Named for a French Basque town from the province of Behe-Nafarroa, Urepel pays homage to Ossau Iraty, the classic Basque ewe’s milk cheese. Production is limited to the months of December through July, so only 2,000 cases are available per year. Once the cheese is formed, it heads to the Spanish side of the Pyrenees to mature for 6-8 months. As the cheese ripens, it is regularly washed to develop a thin tan-colored rind with a semi-firm texture. Distinctive, complex flavors develop during this time period. The final result is a dense cheese with notes of fresh grass and toasted nuts. Perfect with a glass of rosé.
