Instructions
- Preheat the oven to 425°F/220°C. Line a baking sheet with parchment paper.
- Drizzle both sides of the eggplants with olive oil and season with salt and ground black pepper.
- Place the eggplants on a baking sheet and bake until browned and almost tender, 6–8min.
- Then add chopped cherry tomatoes, basil leaves, and cheddar cheese to each eggplant slice. Bake until the cheese melts, about 3–5min.
